2005 Viognier

Harvest Notes: We harvested the Viognier from the Mt. Lincoln vineyards in Palisade via a mechanical harvester, on the 22nd of September 2005; containing a brix content of 24.2o at harvest. We fermented the Viognier under a constant 67oF temperature in a stainless steel tank to retain fruit flavors for 14 days. The 2005 Viognier was made close to the Northern Rhone style Viognier because of the very  hot growing season in 2005. We bottled 336 cases in March 2006. Alc is 13%, pH 3.65, TA 6g/Ltr, 0% RS.

 

Color: Straw with a light hue.

Nose: Moderate floral characters with lemon and white peach.

Palate: Floral characters coming through with a slight citrus taste, low in acidity with a rich silkiness of texture. Full bodied and well balanced with moderate length.

Drink by: Now, why wait?

Pair with: Viognier tastes best when it is consumed young. It pairs well with spicy Asian dishes or medium to strong cheeses. It is also an excellent choice for simply prepared lobster, roast chicken, sole, or trout. Make sure you serve the Viognier cool at around 52-59oF.
