2005 Ice Wine
Harvest Notes: The Ice Wine was harvested from the Mt. Lincoln vineyards and our display vineyards in Palisade, via hand harvest, on the 7th of December 2005; containing a brix content of 42o at harvest. The Ice Wine is a blend of eight different grape varieties, the majority is Semillon. We transferred the frozen grapes into our bladder press, which ran for 1 and a half hours in the extreme cold, and then pumped the juice into a chilling tank where it was left to settle over night. The water in the juice remains frozen as ice crystals and only a few drops of sweet concentrated juice is obtained. The 2005 Ice Wine was fermented in a small tank for 24 days at 65oF. Due to the high sugars and cold temperatures the fermentations process took longer. We bottled 132 cases in July 2007. Alc is 10%, pH 3.67, TA 6.4g/Ltr, 18% RS.
Color: Golden Straw with a light golden hue.
Nose: Peach, pear, dried apricot, honey, citrus, figs and caramel.
Palate: Mangos, apricots and honey coming through. This is a well balanced, full flavored wine that has a long finish.
Drink by: Now until 2014, and longer if cellared correctly.
Pair with: Some strong cheeses work. Many chocolate can overwhelm the Ice Wine, so try nuts, tropical fruit, kiwi, pear and apple-based desserts, foie gras and a rich pate are a great match. Make sure to serve the Ice Wine cool at around 45-50oF.
