2008 Late Harvest Viognier
Harvest Notes: The Viognier was harvested from the Mt. Lincoln vineyards in Palisade via hand harvest, in October 2008; containing a brix content of 33.1o at harvest. The 2008 Late Harvest Wine was fermented at a constant cool temperature for 33 days. Due to the high sugars and cold temperatures the fermentations process took longer. We bottled 363 cases in March of 2009. Alcohol is 10.46%, pH 3.8, TA 5.9g/Ltr, 12.3% RS.
Color: Golden Straw with a light golden hue.
Nose: Peach, pear, dried apricot, honey, citrus, figs and caramel. This is a very aromatic wine.
Palate: Mangos, apricots and honey coming through. This is a well balanced, full flavored wine that has a long finish and a great thickness.
Drink by: Now until 2014, and longer if cellared correctly.
Pair with: Some strong cheeses work, mixed fruits, light cakes or pastries, and fruit tarts. Make sure to serve the Late Harvest cool at around 45-50oF.
