2008 Semi Sweet
Harvest Notes: A blend of 75% Semillon, 25% Sav Blanc, harvested by hand in September. Cold settled and fermented under cool temperatures of 55OF. We bottled 448 cases in March 2009. Alcohol is 11%, pH 3.65, TA .54g/Ltr, 4% RS.
Color: Straw yellow with a light golden hue.
Nose: Light tropical fruits with figs, guava, and nectarine.
Palate: Light tropical fruit coming through, with some guava with a medium length and a generous amount of sweetness. This is a light bodied wine.
Drink by: Now until 2009, and longer if cellared correctly.
Pair with: It is all fruit and it pairs very nicely with many mild flavored foods, such as tuna, swordfish or an Asian stir-fry, chicken, turkey, fruit salads and sweet desserts. Make sure to serve the Semi Sweet cool at around 43-47oF.
